Pickling Onions

Published:I love serving onions with lot of my food as a side. A great favorite of all my family, recently I found a recipe of pickling onion in balsamic vinegar which is the go to favorite of all of us. I hope you pickle and enjoy this easy gourmet level recipe.
Ingredients
- 2 large red onions, thinly sliced legthwise
- 2 large vadalia onions, thinly sliced
- 1 tablespoon coriander seeds
- 1 tablespoon white mustard seeds
- 3 cuts balsamic vinegar
- 3/4 cup water
- 6 tablespoons sugar
- 6 tablespoons kosher salt
- 3 large bay leaves
- 3 sprigs fresh thyme
Instructions
- In a pan, heat coriander and mustard seed just to warm them to develop flavor
- In a saucepan, add balsamic vinegar, water, sugar, and salt and heat that up to dissolve the sugar and salt.
- Slice the onion with a very sharp knife to get perfect slices and it also helps to test your knife skills.
- Once both your onions is cut and ready, pack them in a pickling jar alternating red and white. It is better to use the jars with a clamp top and rubber rings. They are also pretty.
- Fermentation which goes on in pickling adds very good features to the vegetables. It is good for your digestion. It is important to use kosher salt or pickling salt as it has no iodine or added mineral. Therefore, it helps to be careful about your choice of salt in pickling.
- Add bay leaves and thyme sprigs on the sides and push them down into the onions. You can fill the jar with all the onions by pushing down with a rubber spatula.
- Transfer the warmed spices into a heatproof measuring cup. Stir to make sure that the sugar and salt is completely dissolved in the brine and pour the warm brine over the spices in the measuring cup which makes the pour easier and mess free. Stir and pour into the onion and cover all the solids by about an ½-inch.
- Cover the jar tightly and refrigerate for about a week before using it. They are tasty, crispy and a great accompaniment to any grilled food. Fantastic on hamburgers.
