Bitter Gourd Chutney

Published:A chutney I got from a pro who knows and great at making the authentic Hyderabadi recipes. Thanks to Zubaida and Munawar (her son) who offered me the recipe to share with others on my blog. This recipe can be doubled just by adusting the ingredients. The current one is to suit a family of 2 - 4 servings.
Ingredients
- 1 bitter gourd washed well, ends removed and coarsely chopped
- 1 meium onion, coarsely chopped
- 1 plum tomato, coarsely chopped
- 8 fresh medium garlic cloves, peeled and chopped
- 2 small green chilies, chopped
- 1 tablespoon Cilantro, well washed and chopped
- scant tablespoon tamarind paste, or to taste (some like chutney's to have a sour taste
- 2 teaspoons red chili powder
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1/2 teaspoon cumin seeds
- 2 medium garlic cloves, peeled and cut in halves
- 3 dried red arbol chiies
- pinch asafetida (Hing)
Instructions
- In a food processor, blend all the chutney ingredients: bitter gourd, onion, tomato, green chilies, cilantro, red chili powder, and salt, and make a smooth paste.
- For Tadka you need: olive oil, cumin seeds, whole garlic cloves, dried red whole red chilies, and and asafetida.
- In a small saucepan, heat oil until hot. Add cumin seeds and let them brown. Add garlic cloves, and dried chilies. When brown, remove from the heat and sprinkle Hing in the oil and pour the prepared oil over the chutney to serve.
- *You can double the recipe contents to get desired amount.
