Cream of Brocolli Soup

- 1 cup broccoli florets
- 2 tablespoons olive oil
- 2 tablespoons diced celery
- 2 tablespoon diced onions
- 2 cloves garlic, thinly sliced
- 1 cup Chicken broth or water
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose-flour
- 1 ½ cups milk
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoon sour cream
- 1 teaspoon chopped scallion for garnish
Heat olive oil in a saucepan, and sauté onion, celery, and garlic until tender. Add broccoli florets and broth. Cover and simmer until broccoli is very tender.
Transfer the soup to a blender, and blend it to a puree and return to a clean saucepan.
In another saucepan, melt 3 tablespoons butter and 3 tablespoons flour and cook on a low heat to make a roux. Add milk and continue to cook, stirring until it is thick and bubbly. Add the broccoli soup to it and cook stirring until it is incorporated into a delicious soup. Season with salt and pepper to taste. Make sure not to overseason.
Top each serving with a teaspoon, or more if desired, sour cream and chopped green onion.
