Cream of Brocolli Soup

Ingredients
  

  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 2 tablespoons diced celery
  • 2 tablespoon diced onions
  • 2 cloves garlic, thinly sliced
  • 1 cup Chicken broth or water
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose-flour
  • 1 ½ cups milk
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoon sour cream
  • 1 teaspoon chopped scallion for garnish

Instructions
 

  • Heat olive oil in a saucepan, and sauté onion, celery, and garlic until tender. Add broccoli florets and broth. Cover and simmer until broccoli is very tender.
  • Transfer the soup to a blender, and blend it to a puree and return to a clean saucepan. 
  • In another saucepan, melt 3 tablespoons butter and 3 tablespoons flour and cook on a low heat to make a roux. Add milk and continue to cook, stirring until it is thick and bubbly. Add the broccoli soup to it and cook stirring until it is incorporated into a delicious soup. Season with salt and pepper to taste. Make sure not to overseason. 
  • Top each serving with a teaspoon, or more if desired, sour cream and chopped green onion.
